Hello Moms, (this was posted before but deleted ‘cos of junk mails, so, here we go again) with the children back to school and you trying to change up snacks in their lunch packs; here’s my recipe for yummy vanilla cupcake. Everyone can make this, you don’t have to be a great baker to rustle up some cupcakes for your little bosses. These ingredients make up to 36 cupcakes and the can keep for weeks in the fridge. All you need is to pop into the microwave and you got your kids some yummy fresh cupcakes. #wink#
500 grams of Flour, 400 grams of Butter, 300 grams of Sugar, 1/2 tablespoon of Baking Powder, 3 tablespoon Powered Milk, 1 tablespoon Vanilla flavor, 3-4 tablespoon of Brandy(serves as preservative and it is optional), 1 cup(250ml) of water and 10 Large Eggs.
Mix the flour, baking powder and powdered milk together, set the mixture aside, in a separate bowl, cream (mix) sugar and butter until very light and fluffy, whisk the eggs until very light and add to the butter and sugar mixture, then add the vanilla,water, brandy and flour mix, pour batter into your already lined cupcake pans (keep liners half way full) and bake for 16 minutes or until a toothpick inserted in the middle of the cake comes out clean. You can put them in a cupcake box like i did, or in an airtight container and refrigerate. Always preheat your oven before baking.(put on the oven before mixing ingredients)
You can order an inexpensive hand held mixer from any online store for less than #5,000 or buy from the market. Cupcake baking pans are #1,000 -1,500 (depending on the brand). Cupcake liners are #250 for a pack of 100. A mudu of Flour is #200. A small bottle of Vanilla flavor is #100. I’m sure the prices for the rest are already known.
